What should I do with all this food?
I have acorn squash, spaghetti squash,5 ears corn , 2 leeks, 6 carrots, 4 onions, 5 apples, 8 potatoes, 1 zucchini, 15 tomatoes, 8 assorted peppers, 2 eggplant.
Not pictured: beet greens, parsley, spinach, garlic, feta, Parmesan, canned beans, dried lentils, eggs, butter, vinegars, herbs, oils and lots of pasta, rice, bread and other grains.
Maybe I'll make a tomato sauce and eggplant Parmesan tonight, but that still leaves me with a lot of food for two people to do away with before we get the next batch.

Leek soup - uses up the leeks and potatoes and some of the onions. Plus or minus corn kernels depending on preference. You can use a vegetable broth base instead of meat broth.
The tomatoes, zucchini, acorn squash, onions, eggplant, and peppers can go into a ratatouille with a little garlic, olive oil, pepper, and basil.
The rest can go into soup.
And apple pie for dessert!

You can make zucchini bread. Use a lot of the other things in some yummy omelets. Spaghetti squash lasts for a couple of weeks. Do you know how to cook it? If not, let me know. How about some corn chowder?

I bet you would like moussaka. It's a greek dish.
Apple crisp is even easier than apple pie.
I would eat the squash (simply bake, with salt, pepper and butter) and corn, since those are best fresh. But everything else you could probably chop and freeze for soup this winter if you had to.

We sometimes have a similar problem with our produce from our CSA. When we can we take what we are not likely to use to where it will be used. One of our targets is group soup events at our Fellowship. I'm sure that there are other places that would like to get what you see as surplus.

That's a good idea, John. If we get any more cabbage or eggplant this year we'll definitely look for someone else to take it off our hands.
